  • 1 cup unsalted butter, softened
  • ½ cup powdered sugar (plus more for garnish)
  • ½ teaspoon salt
  • 1 tablespoon lemon zest
  • 2/3 cup fresh lemon juice (about 45 lemons)
  • 4 large eggs
  • 2 cups granulated sugar

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. For the crust: In a mixing bowl, combine flour, powdered sugar, and salt. Mix in softened butter until crumbly. Press into a greased 9×13 inch baking pan and bake for 15-20 minutes until lightly golden.
  3. For the filling: In another bowl, whisk together eggs, granulated sugar, lemon juice, and lemon zest until smooth. Pour over the baked crust.
  4. Bake again for 25-30 minutes until the filling is set but slightly jiggly in the center.
  5. Allow to cool completely before cutting into squares and dusting with powdered sugar.
