- 1 24 oz. bag baby Dutch yellow potatoes
- 1/3 cup fresh dill
- 1/4 cup fresh parsley
- 2 Tbsp. fresh thyme leaves
- 1/4 red onion
- 3 Tbsp. capers
- 1/2 cup mayonnaise
- 1/4 cup sour cream
- 1 1/2 Tbsp. lemon juice
- 2 Tbsp. extra virgin olive oil
- Zest of 1 lemon
- 3 cloves grated garlic
- Optional: 1/2 cup feta, gorgonzola or goat cheese
- Sea salt and pepper to taste
Instructions
- Boil water in a large pot with sea salt. Add quartered potatoes and cook for about 7 minutes until tender.
- Drain potatoes using a colander and rinse under cool water. Chill in the refrigerator for at least 1 hour.
- In a mixing bowl, combine mayonnaise, sour cream, lemon juice, olive oil, garlic, lemon zest, salt, and pepper. Whisk until smooth.
- Add cooled potatoes to the dressing along with red onion, capers, dill, parsley, and thyme. Mix gently until well combined.
- Squeeze additional lemon before serving.
