Ingredients
- 1 tbsp olive oil
- 1 tbsp butter
- 1 onion (or 2 shallots)
- 1 large carrot
- 2 stalks celery
- 1 clove garlic
- 4 sprigs thyme (or 1/2 tsp dried thyme)
- 1½ litres / 6 cups chicken stock
- 2 bay leaves
- 75g / 1/2 cup giant/pearl couscous
- 250g / 2 cups cooked turkey or chicken
- Salt and pepper to taste
- 1 tbsp parsley (chopped)
Instructions
- In a large pot over low heat, sauté chopped onion, celery, carrot, garlic, and thyme in olive oil and butter for about 5 minutes until softened.
- Add chicken stock and cooked turkey to the pot along with bay leaves. Season with salt and pepper. Bring to a boil.
- Stir in giant couscous, reduce heat to medium, and cook for 10 minutes or until tender.
- Remove from heat, discard bay leaves, sprinkle with chopped parsley, and serve warm.
