- 2 cups chopped potatoes
- ½ English cucumber, thinly sliced
- ¼ cup corn
- ¼ cup diced carrots
- ¼ cup diced apple
- ⅓ cup mayonnaise
- 1½ teaspoons rice apple vinegar
- ½ teaspoon salt
- 1 teaspoon sugar
- ½ teaspoon salt (or more to taste)
- ¼ teaspoon black pepper
Instructions
- Prepare the cucumber by tossing with salt and letting it sit for 10 minutes. Squeeze out excess moisture and set aside.
- In a pot of boiling salted water, cook the chopped potatoes until fork-tender (about 15 minutes). Add diced carrots during the last 3 minutes of cooking. Drain and let cool.
- In a mixing bowl, combine boiled potatoes, cucumbers, corn, diced apples, and hard-boiled eggs (if using). In another bowl, whisk together mayonnaise, vinegar, sugar, salt, and pepper before adding to the salad mixture. Toss gently to combine.
