Description

  • 2 cups chopped potatoes
  • ½ English cucumber, thinly sliced
  • ¼ cup corn
  • ¼ cup diced carrots
  • ¼ cup diced apple
  • ⅓ cup mayonnaise
  • 1½ teaspoons rice apple vinegar
  • ½ teaspoon salt
  • 1 teaspoon sugar
  • ½ teaspoon salt (or more to taste)
  • ¼ teaspoon black pepper

Instructions

  1. Prepare the cucumber by tossing with salt and letting it sit for 10 minutes. Squeeze out excess moisture and set aside.
  2. In a pot of boiling salted water, cook the chopped potatoes until fork-tender (about 15 minutes). Add diced carrots during the last 3 minutes of cooking. Drain and let cool.
  3. In a mixing bowl, combine boiled potatoes, cucumbers, corn, diced apples, and hard-boiled eggs (if using). In another bowl, whisk together mayonnaise, vinegar, sugar, salt, and pepper before adding to the salad mixture. Toss gently to combine.
