- In a mixing bowl, mash the steamed potatoes and mix in rice flour, sugar, and salt until well combined.
- Scoop some dough into your palm, roll it into a ball, then flatten it slightly using your thumb.
- Add shredded mozzarella cheese to the center of the dough, wrap it around the filling, and pinch to seal.
- Heat oil in a skillet over medium-high heat. Cook each pancake for about 10-12 minutes until golden brown.
