Description

Korean Cheese Hotteok is a delightful twist on the beloved Korean street food, combining a crispy exterior with a gooey, melted cheese filling. Ingredients

  • 1 medium-sized potato (300g)
  • 2–3 tbsp rice flour
  • 1 tbsp sugar
  • ΒΌ tsp salt
  • Shredded mozzarella cheese
  • 1–2 tbsp oil (for cooking)

Instructions

  1. Peel and chop the potato into large chunks. Steam for 10-15 minutes until soft.
  2. In a mixing bowl, mash the steamed potatoes and mix in rice flour, sugar, and salt until well combined.
  3. Scoop some dough into your palm, roll it into a ball, then flatten it slightly using your thumb.
  4. Add shredded mozzarella cheese to the center of the dough, wrap it around the filling, and pinch to seal.
  5. Heat oil in a skillet over medium-high heat. Cook each pancake for about 10-12 minutes until golden brown.
