Ingredients

  • 2 medium zucchini (approx. 430g)
  • 2 eggs
  • 1 tablespoon heavy cream
  • 2.5 oz beef rinds (approx. 1 cup)
  • 1/2 cup grated Parmesan
  • Optional garnish: 2 tablespoons fresh parsley, finely chopped

Instructions

  1. Preheat your oven to 400F (200C).
  2. Cut the zucchini into uniform matchsticks.
  3. In a bowl, whisk together the eggs and heavy cream until well combined.
  4. Process beef rinds in a food processor until crumbly, then mix with grated Parmesan.
  5. Dip each zucchini stick into the egg mixture, then coat with the beef rind mixture.
