  • 2 cups chopped cauliflower
  • 4 ounces cream cheese
  • 3/4 cup shredded cheddar cheese (divided)
  • 2 eggs
  • 1/2 cup heavy cream
  • 2 teaspoons steak seasoning

Instructions

  1. Preheat the oven to 400°F and spray an 8×10" casserole dish with non-stick spray.
  2. Microwave the chopped cauliflower in a covered bowl with water for 5 minutes; drain well.
  3. Brown the ground beef in a non-stick skillet over medium-high heat, seasoning with steak seasoning.
  4. Combine browned beef, cooked cauliflower, cream cheese, and 1/4 cup of shredded cheddar in the skillet.
  5. In a separate bowl, whisk together eggs and heavy cream; pour over the beef mixture in the casserole dish. Top with remaining cheddar.
