Ingredients
- 12 oz fresh raspberries
- 2 large fresh mangoes, cubed
- 1 lb fresh strawberries, cubed
- 1 lb green grapes, halved
- 1 lb red grapes, halved
- 4 cups apple juice
- 4 packets vegan gelatin
- 3 tablespoons granulated sugar
- 1 tablespoon lemon juice
Instructions
- Prepare the bundt pan with pan spray and wipe it down.
- In a bowl, combine 1 cup apple juice with the vegan gelatin and set aside.
- Bring the remaining apple juice to a boil in a saucepan along with sugar and lemon juice. Pour over the gelatin mixture and whisk until dissolved. Let cool.
- Layer the fruits in the prepared bundt pan: start with raspberries, then mangoes, strawberries, green grapes, and finally red grapes.
- Pour the cooled gelatin mixture over the fruits until fully covered. Refrigerate for 3-4 hours until set.
- To serve, briefly dip the bundt pan in warm water to loosen, invert onto a plate, and enjoy!
