  • 12 oz fresh raspberries
  • 2 large fresh mangoes, cubed
  • 1 lb fresh strawberries, cubed
  • 1 lb green grapes, halved
  • 1 lb red grapes, halved
  • 4 cups apple juice
  • 4 packets vegan gelatin
  • 3 tablespoons granulated sugar
  • 1 tablespoon lemon juice

Instructions

  1. Prepare the bundt pan with pan spray and wipe it down.
  2. In a bowl, combine 1 cup apple juice with the vegan gelatin and set aside.
  3. Bring the remaining apple juice to a boil in a saucepan along with sugar and lemon juice. Pour over the gelatin mixture and whisk until dissolved. Let cool.
  4. Layer the fruits in the prepared bundt pan: start with raspberries, then mangoes, strawberries, green grapes, and finally red grapes.
  5. Pour the cooled gelatin mixture over the fruits until fully covered. Refrigerate for 3-4 hours until set.
  6. To serve, briefly dip the bundt pan in warm water to loosen, invert onto a plate, and enjoy!
