Ingredients

  • 8 cups chicken broth
  • 4 cups beef broth
  • 1 large sweet onion, cut into wedges
  • 6 cloves garlic, smashed
  • 2 large carrots, cut into chunks
  • 2-inch piece fresh ginger, sliced
  • 4 scallions, chopped
  • 10 button mushrooms, thinly sliced
  • Salt, to taste

Instructions

  1. In a large stock pot over medium-high heat, add the sesame oil.
  2. Once hot, add the onion, garlic, carrots, and ginger. Sear until caramelized.
  3. Pour in the chicken broth, beef broth, and water; bring to a boil.
  4. Reduce heat to low and simmer for at least one hour.
  5. Use a skimmer to remove solids from the broth; season with salt as needed.
  6. Serve hot in bowls topped with chopped scallions and sliced mushrooms.
