  • 56 pieces boneless chicken breast or 68 pieces boneless chicken thighs
  • 1/3 cup soy sauce
  • 1/4 cup + 2 tbsp brown sugar
  • 2 garlic cloves, minced
  • 1 tbsp fresh ginger, minced
  • 67 wooden skewers (soaked in water)

Instructions

  1. Soak wooden skewers in water for 10–20 minutes.
  2. In a mixing bowl, combine soy sauce, brown sugar, minced garlic, and minced ginger until sugar dissolves.
  3. Cut chicken into 1–2 inch chunks and marinate in the mixture for at least 10 minutes (longer for more flavor).
  4. Cook some leftover marinade in a saucepan over medium heat until thickened.
  5. Thread marinated chicken onto soaked skewers and grill over medium-high heat for about 8–12 minutes, turning occasionally and basting with the thickened sauce until cooked through.
