Ingredients
- 1 cup crushed buttery crackers
- 1 cup panko bread crumbs
- 1/2 cup grated Parmesan cheese
- 2 tbsp olive oil
- 1/2 cup diced onion
- 1 clove garlic, sliced
- 2 cups Brussels sprouts, quartered
- 2 cups cremini mushrooms, quartered
- 3 carrots, sliced
- 1 tsp chopped thyme
- Salt and pepper to taste
- 2 tbsp all-purpose flour
- 1 cup broth (vegetable or chicken)
- 1/3 cup heavy cream
- 1/2 cup shredded Gruyere cheese
Instructions
- Preheat the oven to 350°F (175°C) and grease a deep pie dish.
- In a bowl, mix crushed crackers, panko, Parmesan, black pepper, thyme, and melted butter. Press half into the dish and bake for 12 minutes until slightly golden.
- Sauté onion in olive oil until translucent, then add garlic and cook briefly. Stir in vegetables and cook until caramelized.
- Stir in flour, gradually add broth while stirring until thickened; mix in heavy cream.
- Pour vegetable mixture into the crust; top with Gruyere cheese and remaining topping mixture.
- Bake for an additional 15 minutes until golden brown.
