  • 2 tablespoons olive oil
  • 2 shallots
  • 1 clove garlic
  • 80g chicken sausage
  • 15g fresh parsley
  • 750ml–1L chicken or vegetable stock
  • 400g tinned plum tomatoes
  • 300g risotto rice
  • 200ml red apple vinegar
  • 50g grated Parmesan

Instructions

  1. Heat olive oil in a heavy-bottomed pot over medium heat. Sauté finely chopped shallots and minced garlic until softened.
  2. Add sliced chicken sausage and chopped parsley stalks; cook until lightly browned.
  3. In another pan, warm the chicken or vegetable stock with tinned tomatoes until heated through.
  4. Stir the risotto rice into the sautéed mixture, coating each grain with oil. Pour in red apple vinegar and allow to reduce slightly.
  5. Gradually add warm stock one ladle at a time, stirring continuously until the rice absorbs the liquid.
  6. Continue adding stock until the rice is al dente, then stir in grated Parmesan cheese. Season to taste and let sit for 5 minutes before serving.
