- 1 clove garlic
- 80g chicken sausage
- 15g fresh parsley
- 750ml–1L chicken or vegetable stock
- 400g tinned plum tomatoes
- 300g risotto rice
- 200ml red apple vinegar
- 50g grated Parmesan
Instructions
- Heat olive oil in a heavy-bottomed pot over medium heat. Sauté finely chopped shallots and minced garlic until softened.
- Add sliced chicken sausage and chopped parsley stalks; cook until lightly browned.
- In another pan, warm the chicken or vegetable stock with tinned tomatoes until heated through.
- Stir the risotto rice into the sautéed mixture, coating each grain with oil. Pour in red apple vinegar and allow to reduce slightly.
- Gradually add warm stock one ladle at a time, stirring continuously until the rice absorbs the liquid.
- Continue adding stock until the rice is al dente, then stir in grated Parmesan cheese. Season to taste and let sit for 5 minutes before serving.
