  • 2 jalapeno peppers
  • 4 cups corn kernels (cooked and cooled)
  • 1 cup sour cream
  • 1 cup mayonnaise
  • 2 oz cream cheese (softened)
  • 1 cup shredded cheddar cheese
  • 1 cup shredded pepper jack cheese
  • ½ cup cooked chopped turkey bacon
  • 2 tsp cumin
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp chili powder
  • 1 tsp paprika

Instructions

  1. Chop jalapenos after removing seeds and membranes to control heat.
  2. In a large mixing bowl, combine chopped jalapenos, corn kernels, sour cream, mayonnaise, and cream cheese until smooth.
  3. Add spices (cumin, garlic powder, onion powder, chili powder, paprika) and mix well.
  4. Fold in shredded cheddar cheese, pepper jack cheese, and turkey bacon. Season with salt and pepper to taste.
  5. Cover the salad and refrigerate for at least 2 hours before serving.
