  • 1 (15 ounce) can tomato sauce
  • 1 (15 ounce) can diced tomatoes
  • 1 (15 ounce) can cannellini beans, drained and rinsed
  • 1 (15 ounce) can dark red kidney beans, drained and rinsed
  • 4 cups chicken stock
  • 1 cup uncooked ditalini
  • Kosher salt
  • Fresh cracked pepper
  • Grated Parmesan for garnish
  • Fresh chopped parsley for garnish

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Add ground beef and cook until browned, then set aside.
  2. In the same pot, reduce heat and sauté diced onion, carrots, celery, salt, and pepper for about 5 minutes.
  3. Add minced garlic, Italian seasoning, and tomato paste; cook for 1 minute until fragrant.
  4. Incorporate tomato sauce, diced tomatoes, cannellini beans, kidney beans, chicken stock, uncooked ditalini pasta, and the cooked ground beef back into the pot.
  5. Bring to a simmer; reduce heat and gently simmer for about 5 minutes until pasta is tender yet firm.
  6. Season to taste with salt and pepper before garnishing with grated Parmesan cheese and fresh parsley.
