  • 2 medium butternut squash (about 3 lbs total)
  • 4 boneless, skinless chicken breasts (1.5 lbs)
  • 1/4 cup raw honey
  • 2 tbsp fresh thyme leaves
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C) and spray a baking dish with nonstick cooking spray.
  2. Halve each butternut squash lengthwise, scoop out the seeds, drizzle insides with olive oil, and season with salt and pepper. Place cut-side up in the baking dish.
  3. Roast squash for about 30 minutes or until tender.
  4. Season chicken breasts with salt and pepper, then cook in a skillet over medium heat with olive oil until golden brown (about 6 minutes per side).
  5. Chop cooked chicken into bite-sized pieces, mixing it with honey and thyme.
  6. Stuff each roasted squash half with the chicken mixture and return to the oven for another 10 minutes.
  7. Serve warm, drizzled with extra honey if desired.
