- 1 large egg
- 1 medium onion, finely chopped

- ½ cup ketchup (plus extra for topping)
- 2 cups Yukon Gold or red potatoes, diced
- 2 tbsp olive oil
- 1 tsp Italian seasoning
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large bowl, mix together ground meat, breadcrumbs, egg, onion, garlic powder, ketchup (reserve some for topping), Italian seasoning, salt, and pepper until just combined.
- Form the mixture into golf ball-sized mini loaves and place them on one side of the baking sheet.
- Toss diced potatoes with olive oil, salt, and pepper; spread them out on the other side of the baking sheet.
- Bake for 25-30 minutes until meatloaves reach an internal temperature of at least 165°F and potatoes are golden brown.
- Drizzle remaining ketchup over meatloaves before serving.
