Description

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • ¾ cup granulated sugar
  • 1 cup sour cream
  • 2 tsp pure vanilla extract
  • 1 cup crushed pistachios

Instructions

  1. Preheat oven to 350°F (175°C). In a bowl, mix graham cracker crumbs with melted butter until combined. Press into the bottom of a springform pan to form a crust.
  2. In a large bowl, beat softened cream cheese until smooth. Gradually add sugar and mix well. Stir in sour cream and vanilla until creamy.
  3. Fold in crushed pistachios gently into the mixture.
  4. Pour the filling over the prepared crust and bake for about 45 minutes until set but slightly jiggly in the center.
  5. Turn off the oven and crack the door open slightly. Let cool in the oven for an hour, then refrigerate for at least four hours or overnight before serving.
