Ingredients
- 6 large eggs
- 4 strips thick-cut turkey bacon, cooked and crumbled
- 3 tablespoons mayonnaise
- 1 tablespoon Dijon mustard
- 1 teaspoon apple cider vinegar
- 1/2 teaspoon sugar
- Pinch of salt
- Pinch of black pepper
- Smoked paprika (for garnish)
- Fresh chives, chopped (optional)
Instructions
- Boil the eggs by placing them in a saucepan covered with cold water. Bring to a boil over high heat.
- Once boiling, remove the pan from heat, cover it, and let it sit for 10-12 minutes.
- Cool the eggs in an ice bath for 5 minutes before peeling.
- Slice each egg in half lengthwise and scoop out the yolks into a mixing bowl.
- Mash the yolks with mayonnaise, Dijon mustard, apple cider vinegar, sugar, salt, and pepper until smooth.
- Stir in most of the crumbled turkey bacon.
- Spoon or pipe the mixture back into the egg white halves and garnish with reserved turkey bacon, smoked paprika, and chopped chives if desired.
- Chill for at least 30 minutes before serving.
