  • 2 large russet potatoes
  • 8 oz sirloin or ribeye steak, cubed
  • 2 tsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 cup sour cream
  • 1/4 cup chopped chives or green onions
  • 1 cup shredded cheddar cheese

Instructions

  1. Preheat oven to 400°F (200°C). Wash and dry potatoes, then pierce several times with a fork.
  2. Bake potatoes directly on oven rack or on a baking sheet for 45-60 minutes until tender.
  3. While baking, toss steak cubes with olive oil, salt, and pepper. Sear in a skillet over medium-high heat for about 3-4 minutes.
  4. Once baked, slice potatoes open and fluff insides with a fork. Top with sour cream and seared steak bites.
  5. Sprinkle shredded cheese on top while it's hot, then finish with chopped chives.
