Description

Greek Roasted Potatoes With Peppers & Feta is a vibrant side dish that brings the essence of the Mediterranean to your table.   • 2 lbs Yukon Gold Potatoes, cut into wedges
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 tsp dried oregano
  • 2 red bell peppers, sliced
  • 4 oz feta cheese, crumbled
  • Juice of 1 lemon
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, toss the potato wedges with olive oil, minced garlic, oregano, salt, and pepper.
  3. Spread the seasoned potatoes in a single layer on the baking sheet. Roast for 30-35 minutes until golden brown and fork-tender, flipping halfway through.
  4. After about 20 minutes of roasting, add the sliced red bell peppers to the baking sheet.
  5. In the last five minutes of cooking, sprinkle crumbled feta over the potatoes and peppers.
  6. Remove from the oven and drizzle fresh lemon juice over before serving.
