- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted

- 2 tbsp espresso powder
- 1 cup sour cream

- 1 tsp agar-agar powder
Instructions
- Preheat oven to 350°F (175°C). Combine graham cracker crumbs and melted butter in a bowl; press into the bottom of a springform pan.
- In another bowl, beat cream cheese until smooth. Gradually add sugar and espresso powder, mixing until blended.
- Stir in sour cream and vanilla extract until smooth.
- In a saucepan, dissolve agar-agar in water over low heat. Allow to cool slightly before mixing into the cream cheese mixture.
- Pour the filling over the crust and bake for 50-60 minutes until set around edges but jiggly in the center. Cool completely at room temperature before refrigerating for at least four hours or overnight.
