  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1 cup granulated sugar
  • 2 tbsp espresso powder
  • 1 cup sour cream
  • 2 tsp vanilla extract
  • 1 tsp agar-agar powder

Instructions

  1. Preheat oven to 350°F (175°C). Combine graham cracker crumbs and melted butter in a bowl; press into the bottom of a springform pan.
  2. In another bowl, beat cream cheese until smooth. Gradually add sugar and espresso powder, mixing until blended.
  3. Stir in sour cream and vanilla extract until smooth.
  4. In a saucepan, dissolve agar-agar in water over low heat. Allow to cool slightly before mixing into the cream cheese mixture.
  5. Pour the filling over the crust and bake for 50-60 minutes until set around edges but jiggly in the center. Cool completely at room temperature before refrigerating for at least four hours or overnight.
