  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 cup full-fat coconut milk
  • 1/4 cup freshly squeezed lime juice
  • 2 tbsp honey
  • 1 tbsp grated fresh ginger
  • 3 garlic cloves, minced
  • Salt and pepper, to taste
  • Fresh cilantro, for garnish

Instructions

  1. In a bowl, mix coconut milk, lime juice, honey, ginger, garlic, salt, and pepper until well combined.
  2. Place chicken breasts in a resealable bag or dish; pour half the marinade over them. Seal and refrigerate for at least 1 hour (or overnight for better flavor).
  3. Preheat grill to medium-high heat (375°F) or oven to 400°F.
  4. Remove chicken from marinade (discard leftover marinade) and cook on grill for 6-7 minutes per side until internal temperature reaches 165°F. For baking, cook in a greased dish for about 25 minutes.
  5. Let chicken rest before slicing; drizzle with reserved cooked marinade if desired and garnish with cilantro.
