  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 chipotle peppers in adobo sauce, finely chopped
  • 2 tbsp fresh lime juice
  • 2 tbsp extra virgin olive oil
  • 4 cups mixed greens (spinach, romaine, arugula)
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, sliced
  • 1 avocado, cubed
  • ½ cup Greek yogurt
  • 1 tsp garlic powder
  • ¼ cup chopped cilantro

Instructions

  1. Preheat your grill or grill pan to medium-high heat.
  2. Season chicken breasts with salt, pepper, and olive oil.
  3. In a bowl, mix chipotle peppers with lime juice and olive oil; coat the chicken and marinate for 10 minutes.
  4. Grill chicken for 6–7 minutes on each side until cooked through (165°F internal temp). Let rest before slicing.
  5. Chop mixed greens, halve tomatoes, slice cucumber, and cube avocado.
  6. In a separate bowl, combine Greek yogurt, garlic powder, cilantro, lime juice from half a lime, salt, and pepper to make the dressing.
  7. Toss sliced chicken with veggies and drizzle dressing over; serve immediately.
