  • 2 tbsp lime juice

  • 1 tsp baking powder

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a mixing bowl, cream together softened butter and granulated sugar until light and fluffy. Add eggs one at a time, mixing well after each addition.
  3. In another bowl, whisk together flour and baking powder. Gradually fold this mixture into the wet ingredients until just combined.
  4. In a separate bowl, beat cream cheese until smooth. Mix in blackberries, lime juice, and zest until well blended yet chunky.
  5. Spoon one tablespoon of batter into each muffin cup, add cheesecake filling on top, then cover with another tablespoon of batter.
  6. Bake for 20-25 minutes or until golden brown and a toothpick inserted comes out clean. Cool completely before serving.
