  • 1 lb flank steak, thinly sliced
  • 8 oz egg noodles (fresh or dried)
  • 1 cup bell peppers, sliced (mixed colors)
  • 1 cup broccoli florets
  • 1 cup carrots, julienned
  • 1 tbsp fresh ginger, grated
  • 3 cloves garlic, minced
  • ¼ cup low-sodium soy sauce
  • 2 tbsp brown sugar
  • 3 cloves garlic, minced
  • 1 tbsp cornstarch mixed with 2 tbsp water

Instructions

  1. Slice the beef thinly against the grain. Chop the bell peppers, broccoli, and carrots.
  2. Cook the egg noodles according to package instructions until al dente; drain and set aside.
  3. Heat oil in a large skillet or wok over medium-high heat. Sauté the beef until browned (about 5 minutes), then remove from the pan.
  4. In the same skillet, add more oil if needed and stir-fry the vegetables along with ginger and garlic for about 3 minutes until tender yet crisp.
  5. Whisk together soy sauce, brown sugar, minced garlic, and cornstarch mixture in a bowl. Pour over vegetables in the skillet.
  6. Add cooked noodles and beef back to the pan. Toss everything together over low heat until well combined (about 2 minutes). Serve immediately.
