- 1 cup carrots, julienned
- 1 tbsp fresh ginger, grated
- 3 cloves garlic, minced
- ¼ cup low-sodium soy sauce
- 2 tbsp brown sugar

- 1 tbsp cornstarch mixed with 2 tbsp water
Instructions
- Slice the beef thinly against the grain. Chop the bell peppers, broccoli, and carrots.
- Cook the egg noodles according to package instructions until al dente; drain and set aside.
- Heat oil in a large skillet or wok over medium-high heat. Sauté the beef until browned (about 5 minutes), then remove from the pan.
- In the same skillet, add more oil if needed and stir-fry the vegetables along with ginger and garlic for about 3 minutes until tender yet crisp.
- Whisk together soy sauce, brown sugar, minced garlic, and cornstarch mixture in a bowl. Pour over vegetables in the skillet.
- Add cooked noodles and beef back to the pan. Toss everything together over low heat until well combined (about 2 minutes). Serve immediately.
