  • 2 cups all-purpose flour
  • 1 cup unsalted butter (softened)
  • 1 cup granulated sugar
  • 1 tsp baking powder
  • 1 cup chopped walnuts or pistachios
  • 1/2 cup honey
  • 8 oz cream cheese (softened)
  • 1 cup powdered sugar

Instructions

  1. Preheat oven to 350°F (175°C). In a bowl, mix softened butter and granulated sugar until fluffy. Gradually add flour and baking powder to create a soft dough.
  2. Divide dough into small balls and place on a parchment-lined baking sheet. Flatten slightly with fingers or a glass.
  3. Bake for 10-12 minutes until edges are golden brown. Allow to cool.
  4. Meanwhile, whip cream cheese and powdered sugar until smooth; add honey and chopped nuts.
  5. Once cooled, spread cream filling between two cookies to form sandwiches.
  6. Serve and enjoy! Optionally drizzle with extra honey.
