  • 2 small onions (chopped)
  • 2 carrots (diced)
  • 2 stalks celery (diced)
  • 2 zucchini (diced)
  • 1 bell pepper (cored and diced)
  • 1 can tomato juice (19 ounces)
  • 1 can diced tomatoes (28 ounces)
  • 4 cups vegetable broth
  • ½ cup small pasta (shells, elbows, or ditalini)
  • 1 tablespoon dry parsley
  • ½ tablespoon oregano
  • 1 bay leaf
  • Salt and pepper to taste
  • 1 can cannellini or kidney beans (rinsed and drained)
  • 2 cups baby spinach
  • Fresh parsley or basil for garnishing

Instructions

  1. Prepare your vegetables by dicing the onions, carrots, celery, zucchini, and bell pepper.
  2. In the Instant Pot, combine the diced veggies with tomato juice, diced tomatoes, vegetable broth, pasta, parsley, oregano, bay leaf, salt, and pepper.
  3. Seal the Instant Pot lid ensuring the valve is closed.
  4. Set to Manual mode at high pressure for 10 minutes; allow time to reach pressure.
  5. Once cooking is complete, perform a quick release of the pressure.
  6. Carefully open the lid and adjust seasoning as needed.
  7. Stir in beans and spinach; replace the lid for an additional five minutes.
  8. Serve hot garnished with fresh herbs alongside crusty bread.
