  • 2 1/4 cups mashed overripe bananas
  • 2 cups all-purpose flour
  • 1/4 tsp salt
  • 1 tsp baking soda
  • 1/2 tsp nutmeg
  • 1/2 cup butter
  • 1/4 cup white sugar
  • 1/4 cup brown sugar
  • 2 eggs, beaten
  • 1 tsp vanilla
  • 1 tsp cinnamon

Instructions

  1. Mash bananas until you have 2 1/4 cups.
  2. In a large bowl, mix flour, salt, baking soda, and nutmeg.
  3. Cream together butter and both sugars in another bowl. Add cinnamon, eggs, vanilla, and mashed bananas; mix well.
  4. Combine the banana mixture with dry ingredients and stir gently.
  5. Pour batter into a greased pan. Insert a trivet into the Instant Pot with 1 cup of water below. Cover the pan with foil.
  6. Seal the lid of the Instant Pot and cook on manual mode for 50 minutes.
  7. Perform a quick release after cooking ends. Let cool before slicing.
