  • 1 ½ cups crushed pretzels
  • ½ cup unsalted butter, melted
  • ¼ cup granulated sugar (for crust)
  • 16 oz cream cheese, softened
  • 1 cup sour cream
  • ¾ cup granulated sugar (for filling)
  • 2 tsp vanilla extract
  • 3 large eggs, room temperature
  • ½ cup salted caramel sauce

Instructions

  1. Preheat oven to 350°F (175°C). In a bowl, mix crushed pretzels, melted butter, and ¼ cup sugar. Firmly press into the bottom of a springform pan. Bake for 10 minutes until golden brown.
  2. In another bowl, beat softened cream cheese until smooth. Add sour cream and ¾ cup sugar; mix well. Blend in vanilla and add eggs one at a time.
  3. Pour the cream cheese mixture over the cooled pretzel crust and smooth the top.
  4. Bake for 50-60 minutes or until edges set but center jiggles slightly. Turn off oven, leaving cheesecake inside to cool for about an hour.
  5. Refrigerate for at least four hours or overnight. Before serving, drizzle with salted caramel sauce.
