Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup unsalted butter (cold)
  • 1/4 cup whole milk (warm)
  • 2 tablespoons sugar
  • 1 teaspoon active dry yeast
  • 1 teaspoon salt

Instructions

  1. In a large bowl, combine flour, sugar, salt, and yeast. Gradually mix in warm milk until a shaggy dough forms.
  2. Knead the dough on a floured surface for about 5–10 minutes until smooth.
  3. Flatten cold butter between parchment sheets into a rectangle and chill.
  4. Roll out the dough into a rectangle, place the chilled butter on one half, fold over to encase it, and roll out again. Fold into thirds and repeat this lamination process two more times.
  5. Cut triangles from the laminated dough and roll each triangle from base to tip to shape your croissants.
  6. Place them on lined baking trays to proof until doubled in size (about 1 hour).
  7. Preheat oven to 400°F (200°C) and bake for 15-20 minutes until golden brown.
