- 9 lasagna noodles (traditional or no-boil)
- 4 cups fresh spinach
- 1 cup sliced cremini mushrooms
- 1 cup ricotta cheese (whole milk)
- 2 cups shredded part-skim mozzarella cheese
- ½ cup freshly grated parmesan cheese
- 2 cloves minced garlic
- 2 tsp olive oil
- 1 cup vegetable broth
- 1 tsp dried Italian herbs (oregano, basil, thyme)
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C) and lightly coat a baking dish with nonstick spray.
- In a skillet over medium heat, heat olive oil and sauté minced garlic for about one minute. Add mushrooms and spinach; cook until mushrooms are tender and spinach wilts (about five minutes).
- In a bowl, combine ricotta cheese, half of the mozzarella, parmesan, dried herbs, salt, and pepper.
- Spread a thin layer of vegetable broth in the baking dish. Layer with lasagna noodles, half of the sautéed vegetables, and half of the ricotta mixture. Repeat layers.
- Top with remaining noodles and ricotta mixture. Sprinkle remaining mozzarella on top.
- Cover with foil; bake for 25 minutes. Remove foil; bake an additional 15 minutes until bubbly and golden brown.
