  • 6 ripe tomatoes (about 1.5 lbs), quartered
  • 1 whole head of garlic
  • 4 cups low-sodium vegetable broth
  • 1 cup full-fat coconut cream
  • 2 tbsp extra virgin olive oil
  • 1/4 cup fresh basil, chopped

Instructions

  1. Preheat the oven to 400°F (200°C). Cut the top off the garlic head, drizzle with olive oil, wrap in foil, and roast for 30-35 minutes until soft.
  2. While the garlic roasts, add chopped tomatoes to a large pot with olive oil over medium heat and sauté for about 10 minutes until they begin to break down.
  3. Once cooled slightly, squeeze the roasted garlic into the pot with tomatoes. Add vegetable broth and simmer for another 10 minutes.
  4. Blend until smooth using an immersion blender or regular blender.
  5. Stir in coconut cream until well combined and serve garnished with fresh basil.
