  • 1 lb boneless skinless chicken breast, diced
  • 1 cup bell peppers, diced (mix of red and green)

  • 1 cup provolone cheese, shredded
  • 1 cup low-sodium chicken broth
  • ½ cup heavy cream
  • ½ tsp red pepper flakes
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Cook the tortellini according to package instructions in salted boiling water until al dente. Drain and reserve ½ cup pasta water.

  3. Add diced chicken to the skillet; cook until browned and no longer pink (6-7 minutes), stirring occasionally.
  4. Pour in chicken broth and heavy cream; simmer for 5 minutes until slightly thickened.
  5. Stir in provolone cheese until melted and smooth. If the sauce is too thick, add reserved pasta water to achieve desired consistency.
