Ingredients
- 10 lemons
- 770 mL of lemon juice (80–100 proof)
- 1–2 cups of sugar
- 1–2 cups of water
Instructions
- Wash lemons thoroughly and peel off the yellow zest using a vegetable peeler. Divide the peels between two glass jars.
- Pour lemon juice evenly over the peels in each jar, seal tightly, and let sit out of direct sunlight for 4 days to one month. Shake gently every couple of days.
- After infusion, combine 1 cup of sugar with 1 cup of water in a small saucepan over medium-low heat until dissolved to create simple syrup.
- Strain the infused lemon mixture through a mesh strainer into a bowl to remove the peels.
- Mix in your prepared simple syrup to adjust sweetness as desired.
