  • 3 tablespoons unsalted butter (divided)
  • 2 tablespoons lemon juice
  • ¼ teaspoon salt
  • 3 tablespoons apricot preserves
  • 1 tablespoon coconut sugar
  • ½ teaspoon ground cinnamon (divided)
  • Pinch of ground nutmeg
  • 1 sheet puff pastry (9.5 x 9 inches)

Instructions

  1. Preheat oven to 375°F and line a baking sheet with parchment paper.
  2. Core and slice apples thinly (about ⅛ inch).
  3. In a bowl, mix apple slices with 1 tablespoon melted butter, lemon juice, and salt. Spread evenly on the baking sheet.
  4. Bake for about 10 minutes until softened; let cool.
  5. Grease muffin tray with remaining melted butter.
  6. Combine coconut sugar, cinnamon, and nutmeg in a bowl.
  7. Roll out puff pastry into a rectangle (12 x 10 inches) and brush with apricot preserves; sprinkle with sugar mixture.
  8. Cut into six strips (10 x 2 inches) and layer apple slices along one edge of each strip.
  9. Fold dough over apples and roll up into a pinwheel shape; place in the muffin pan.
  10. Repeat until all strips are used; bake for 40-45 minutes until golden brown.
