  • 1 cup peaches, finely diced (fresh or canned)
  • 1/2 cup milk
  • 8 oz cream cheese, softened
  • 1/4 cup butter, softened
  • 3 cups powdered sugar, sifted
  • 2 tablespoons honey
  • 1 teaspoon vanilla extract
  • 2 tablespoons peach puree (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a bowl, whisk together flour, baking powder, and salt.
  3. In another bowl, cream butter, sugar, and honey until light and fluffy.
  4. Beat in eggs one at a time, then mix in vanilla.
  5. Alternate adding dry ingredients and milk to the wet mixture until just combined.
  6. Fold in diced peaches gently to retain their texture.
  7. Fill the cupcake liners two-thirds full with batter.
  8. Bake for 18–22 minutes or until a toothpick comes out clean.
  9. Allow cupcakes to cool completely before frosting with cream cheese mixture made by beating softened cream cheese and butter with honey and powdered sugar.
