- 2–3 tablespoons honey
- 1 teaspoon lemon zest
- 4 cups romaine lettuce, chopped
- 1 cup crumbled gorgonzola cheese (optional)
- 1 cup slivered almonds
- 1.5 cups blueberries
- 1/2 cup dried cranberries or cherries
Instructions
- Prepare the dressing by mixing Greek yogurt, yellow mustard, Dijon mustard, honey, lemon zest, salt, and pepper in a mason jar or bowl. Refrigerate.
- Marinate the chicken with soy sauce, olive oil, garlic, and lemon juice for at least 30 minutes.
- Grill the chicken over medium heat until cooked through (about 4-5 minutes per side).
- Allow the chicken to rest for five minutes before slicing it into bite-sized pieces.
