  • 2 chipotle peppers in adobo sauce, finely chopped
  • 2 tablespoons fresh lime juice
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 2 cups cooked white rice
  • 1 cup black beans, rinsed and drained
  • 1 cup corn kernels (fresh or frozen)
  • 1 large avocado, sliced
  • ½ cup sour cream or Greek yogurt
  • 1 cup chopped romaine lettuce
  • ½ cup diced tomatoes or salsa

Instructions

  1. Preheat your grill or skillet over medium-high heat.
  2. In a mixing bowl, combine honey, chipotle peppers, lime juice, garlic, olive oil, and salt. Add chicken thighs and marinate for at least 30 minutes.
  3. While the chicken marinates, cook rice according to package instructions and prepare toppings.
  4. Grill marinated chicken for about 5 to 6 minutes per side until fully cooked. Let rest before slicing.
  5. Assemble bowls starting with rice and layering on beans, corn, lettuce, tomatoes/salsa, and sliced chicken.
