Ingredients
- 3 pounds roma or plum tomatoes, cut in half
- 8 cloves garlic, peeled
- 3 tablespoons olive oil
- 2 yellow onions, thinly sliced
- ½ cup packed basil leaves
- ½ teaspoon dried oregano
- 1–2 cups water or vegetarian broth, depending on how thick you want the soup
- Freshly ground salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.
- Halve the tomatoes and place them with garlic on the baking sheet. Drizzle with olive oil and season with salt and pepper. Roast for 40-45 minutes until caramelized.
- In a large pot, heat olive oil over medium heat. Add sliced onions and cook until golden brown, about 20 minutes.
- Allow the roasted tomatoes and garlic to cool slightly, then blend them until smooth along with the basil and caramelized onions.
- Return the mixture to the pot, add dried oregano, water or broth, salt, and pepper. Simmer for about 10 minutes before serving.
