Ingredients

  • 750 ml lemon juice
  • 8 fresh lemons
  • 4 cups water
  • 3 cups granulated sugar

Instructions

  1. Prepare the lemon peels by carefully removing the zest from the lemons and placing it in a glass container. Pour in the lemon juice and seal tightly. Store in a cool, dark place for 2 to 4 weeks, shaking occasionally.
  2. To create the syrup, combine sugar and water in a medium pot over medium heat, stirring until dissolved. Chill the syrup in the fridge for at least 10-15 minutes.
  3. Once infused, strain the lemon mixture to separate the peels from the liquid. Press down to extract as much liquid as possible.
  4. Mix the chilled syrup with the strained limoncello concentrate and pour into glass bottles.
  5. Serve over ice or mixed with sparkling water for a refreshing spritz.
