  • 1 fresh pineapple
  • 2 lbs boneless chicken thighs (or breasts)
  • 1/2 cup coconut aminos
  • 1/4 cup pineapple juice
  • 1/4 cup tomato paste
  • 46 pitted dates
  • 2 tsp garlic powder
  • 2 tsp chili powder
  • 1 tsp smoked paprika

Instructions

  1. Soak dates in warm water for 10-15 minutes.
  2. Blend soaked dates with coconut aminos, pineapple juice, tomato paste, garlic powder, chili powder, and smoked paprika until smooth.
  3. Marinate chicken in the mixture for at least 30 minutes or up to 24 hours.
  4. Cut pineapple into rounds.
  5. Preheat grill to high heat (500°F) and grill chicken and pineapple for about 5-6 minutes per side until cooked through.
