  • 1 1/2 cups heavy cream
  • 1/2 cup (1 stick) butter
  • 5 cloves garlic, finely minced
  • 1 tbsp chopped fresh thyme
  • 1 tsp cornstarch
  • Kosher salt and freshly cracked black pepper to taste
  • 1/3 cup fresh parmesan cheese, grated

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a mixing bowl, whisk together heavy cream and cornstarch until combined.
  3. Melt butter in a saucepan over medium heat, add garlic and sauté until fragrant.
  4. Stir in thyme, salt, pepper, and then pour in the cream mixture; cook until slightly thickened.
  5. In a greased baking dish, layer half of the sliced sweet potatoes followed by half of the cream sauce; repeat layers.
  6. Sprinkle grated parmesan cheese on top.
  7. Cover with foil and bake for about 30 minutes; remove foil and bake an additional 10 minutes until golden brown.
