  • 1/4 cup granulated sugar
  • 1 tablespoon salt
  • 1 tablespoon active dry yeast
  • 1 1/4 cups warm milk
  • 2 tablespoons unsalted butter, melted
  • 1 cup unsalted butter, cold, shaped into a flat square
  • 1 egg
  • 1 tablespoon milk

Instructions

  1. In a large bowl or stand mixer, combine flour, sugar, and salt. Dissolve yeast in warm milk; let sit until foamy (5-10 minutes). Mix milk mixture and melted butter with dry ingredients; knead until smooth (3-5 minutes). Shape into a rectangle, wrap in plastic wrap, and refrigerate for 1 hour.
  2. Roll cold butter between parchment sheets into a 6-inch square. Roll dough into a 12-inch square; place butter diagonally in the center and fold corners over to enclose.
  3. Roll dough into an 8×20 inch rectangle; fold into thirds (first turn). Chill for 30 minutes. Repeat rolling and folding two more times.
  4. Roll out dough to about 1/4-inch thick; cut triangles roughly 5 inches wide at the base. Starting from the wide end, roll towards the tip to shape croissants.
  5. Let the croissants rise at room temperature for about 1.5 to 2 hours. Preheat oven to 400°F (200°C). Brush with egg wash.
  6. Bake for 18-22 minutes until golden brown; cool on a wire rack before serving.
