  • 4 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tsp salt
  • 2 1/4 tsp instant yeast
  • 1 1/4 cups cold whole milk
  • 1 cup unsalted butter, softened
  • 16 chocolate batons or high-quality semi-sweet chocolate

Instructions

  1. In a stand mixer bowl, combine flour, sugar, salt, and yeast. Gradually add cold milk and knead for about 5 minutes until soft yet slightly tacky. Cover and refrigerate for 30 minutes.
  2. For the butter layer, beat softened butter with flour until smooth and shape it into a rectangle; refrigerate for another 30 minutes.
  3. Roll out the dough into a rectangle large enough to encase the butter layer. Fold over the dough to seal it tightly.
  4. Roll it out again and fold into thirds; repeat this step two more times with chilling intervals of 30 minutes.
  5. After a final chill of at least 4 hours or overnight, roll out into rectangles and place chocolate at one end before rolling tightly.
  6. Proof the croissants at room temperature for an hour, then refrigerate for another hour before brushing with egg wash and baking at 400°F for about 20 minutes.
