  • 4 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 2 teaspoons salt
  • 2 teaspoons instant yeast
  • 1 1/2 cups cold whole milk or almond milk
  • 1 cup unsalted butter, softened but cold
  • 12 pieces chocolate batons or semi-sweet chocolate

Instructions

  1. In a mixing bowl, combine flour, sugar, salt, and yeast. Gradually add cold milk until a dough forms. Knead on a floured surface for 5-7 minutes until smooth. Wrap in plastic wrap and refrigerate for at least 90 minutes.
  2. Place butter between parchment paper and roll into a rectangle about 1/2-inch thick; chill until firm.
  3. Roll out dough into a large rectangle; place butter in the center and fold the dough over it completely.
  4. Roll out again and perform letter folds three times, chilling for 30 minutes between folds.
  5. Cut triangles from the final dough and place chocolate at the base; roll towards the tip.
  6. Preheat oven to 400°F (200°C). Brush with egg wash (or milk) and bake for about 20 minutes until golden brown.
