  • 1 tablespoon granulated sugar
  • 1 teaspoon salt
  • 1 tablespoon instant yeast
  • 1 cup cold whole milk (or almond milk)
  • 1 cup unsalted butter
  • 6 oz chocolate batons (or high-quality chocolate chips)
  • 1 large egg
  • 1 tablespoon milk (or cream)
  • 1 cup confectioners' sugar

Instructions

  1. In a mixing bowl, combine flour, sugar, salt, and yeast. Gradually add cold milk to form a dough.
  2. Knead on a floured surface until smooth and elastic. Shape into a ball and refrigerate for 2 hours.
  3. Soften butter slightly and mix in flour; shape into a square and chill until firm.
  4. Roll out chilled dough into a rectangle, place butter square in the center, fold like an envelope, and roll out again. Repeat this process two more times with chilling between folds.
  5. Cut rolled dough into triangles, place chocolate at the base, and roll tightly.
  6. Preheat oven to 400°F (200°C). Brush croissants with egg wash and bake for 15-20 minutes until golden brown.
