  • 3 tablespoons sugar
  • 1 1/2 tablespoons cornstarch
  • Pinch of salt
  • 2 teaspoons fresh lemon juice
  • 1 package pre-made pie crust (2 in a pack)
  • 1 egg (for egg wash)
  • 3/4 cup powdered sugar (for drizzle)
  • 12 tablespoons milk (for drizzle)

Instructions

  1. Cook blueberries in a medium saucepan over medium heat for about 9 minutes until soft.
  2. Mix sugar, cornstarch, and salt; add to blueberries and stir until thickened (about 2-3 minutes). Stir in lemon juice and let cool.
  3. Preheat oven to 425°F (220°C) and line baking sheets with parchment paper.
  4. Cut out 16 circles from the pie dough using a cookie cutter.
  5. Place half the circles on the baking sheet; add about 1 tablespoon of blueberry filling to each.
  6. Top each filled circle with another dough circle, crimp edges with a fork, and cut slits on top for steam.
  7. Brush each pie with an egg wash mixture (egg + water).
  8. Bake for about 20 minutes until golden brown; cool slightly before drizzling icing.
