- 2 cups fresh blueberries
- 3 tablespoons sugar
- 1 1/2 tablespoons cornstarch
- Pinch of salt
- 2 teaspoons fresh lemon juice
- 1 package pre-made pie crust (2 in a pack)
- 1 egg (for egg wash)
- 3/4 cup powdered sugar (for drizzle)
- 1–2 tablespoons milk (for drizzle)
Instructions
- Cook blueberries in a medium saucepan over medium heat for about 9 minutes until soft.
- Mix sugar, cornstarch, and salt; add to blueberries and stir until thickened (about 2-3 minutes). Stir in lemon juice and let cool.
- Preheat oven to 425°F (220°C) and line baking sheets with parchment paper.
- Cut out 16 circles from the pie dough using a cookie cutter.
- Place half the circles on the baking sheet; add about 1 tablespoon of blueberry filling to each.
- Top each filled circle with another dough circle, crimp edges with a fork, and cut slits on top for steam.
- Brush each pie with an egg wash mixture (egg + water).
- Bake for about 20 minutes until golden brown; cool slightly before drizzling icing.
