  • 4 bone-in chicken thighs (skin-on)
  • 2 cups baby potatoes, halved
  • 1 cup sliced mushrooms (cremini or button)
  • 2 cloves garlic, minced
  • ½ cup heavy cream
  • 1 cup chicken broth
  • 1 tablespoon olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Season chicken thighs with salt, pepper, thyme, and rosemary.
  3. Heat olive oil in a cast iron skillet over medium-high heat. Sear chicken thighs skin-side down for about 5-7 minutes until golden brown; flip and cook for another 5 minutes. Remove from skillet and set aside.
  4. In the same skillet, sauté minced garlic and mushrooms for 2-3 minutes until softened.
  5. Add halved baby potatoes to the skillet and stir well. Pour in chicken broth and heavy cream; mix thoroughly.
  6. Nestle seared chicken thighs on top of the vegetable mixture.
  7. Bake in the preheated oven for 35-40 minutes until chicken is cooked through (internal temperature reaches 165°F) and potatoes are tender.
  8. Let it rest for a few minutes before garnishing with fresh parsley and serving.
