  • 4 chicken drumsticks
  • 4 medium potatoes, peeled & cubed
  • 2 carrots, sliced
  • 1 red bell pepper, sliced
  • 1 onion, sliced
  • 2 tbsp olive oil
  • 1 tsp paprika
  • 1 tsp dried oregano
  • 1 tsp garlic powder
  • 1/2 tsp ground black pepper
  • Salt to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat oven to 200°C (400°F).
  2. In a large bowl, toss the chicken drumsticks with olive oil, paprika, oregano, garlic powder, salt, and pepper until well coated.
  3. In another bowl, combine cubed potatoes, sliced carrots, red bell pepper, and onion. Add olive oil, paprika, salt, and pepper; mix until coated.
  4. Spread the seasoned vegetables in a baking dish and place the marinated chicken on top.
  5. Roast in the preheated oven for about 50–55 minutes or until the chicken reaches an internal temperature of 75°C (165°F), turning halfway through.
  6. Garnish with chopped parsley before serving hot.
