Ingredients

  • Boneless chicken breasts
  • Fresh parsley
  • Thyme
  • Rosemary
  • Crushed garlic
  • Olive oil drizzle
  • Lemon juice
  • Salt & pepper
  • Small baby potatoes
  • Garlic powder
  • Paprika
  • Fresh chopped parsley
  • Sour cream or thick Greek yogurt
  • Finely chopped chives
  • Lemon zest

Instructions

  1. Marinate the chicken with chopped herbs, crushed garlic, olive oil, lemon juice, salt, and pepper for at least 15 minutes.
  2. Preheat oven to 400°F (200°C). Toss washed baby potatoes with olive oil, garlic powder, paprika, salt, and pepper.
  3. Spread the potatoes on a baking sheet and roast for 25-30 minutes until golden brown.
  4. Cook marinated chicken in a skillet over medium-high heat for 6–7 minutes per side until fully cooked.
  5. Mix sour cream (or yogurt) with chives, parsley, garlic, lemon zest, paprika dusting, salt, and pepper to make the dip.
  6. Slice the chicken and serve alongside roasted potatoes and creamy dip.
